PATRA (A Tempting Snack made of Kumaoni Arbi k Patte)




This is very Famous Recipe in Gujarat where I live. Its made of leaves of Colocasia called Arbi in Hindi. The main ingredient of recipe Arbi k patte is found in abundance in Kumaon so it will be available easily in the market everywhere. Lets begun to cook. 

Ingredients: 
6 Colocasia leaves (Arbi k patte)
60 gms Bengal gram flour (Besan)
4 Green chillies
2 tsp Chopped ginger (Adrak)
2 tsp jaggery (Gud)
1 tsp sesame seeds (Til)
3 tsp Tamarind (Imli/Lemon for Tangy Taste)
1 tsp crushed Coriander (Dhania) seeds
1/2 tsp Mustard seeds ( Rai / Sarson)
2 tbsp Oil
Salt to taste 

Method:
  1. Remove the Stems of Arbi leaves to get a smooth surface wash & keep aside.
  2. Combine the green chilies and ginger and blend in a mixer till smooth and keep aside.
  3. Sieve the besan and set aside.
  4. Mix tamarind/Lemon and the jaggery and keep aside.
  5. Combine the besan, and the tamarind pulp and mix well and add water to make a smooth thick batter.
  6. Add the salt, spices and mix well.
  7. Take one colocasia leaf and place it on the reverse side.
  8. Spread the batter evenly on the leaf and put another leaf on top of it and spread more batter.
  9. Fold from both sides and roll tightly to make a roll. Tie with a thread throughout the length of the roll.
  10. Repeat the method for the rest of the leaves.
  11. Steam for one hour in a steamer or in a water bath and keep aside to cool.
  12. Slice the roll into ½" thick slices and keep aside,
  13. Heat the oil in a pan and add the mustard seeds.
  14. When the seeds crackle, add the patra slices and sauté for 1-2 minutes.
  15. Serve hot garnished with coriander and grated coconut.
